Position: Sous Chef (Italian Cuisine), Catering Services

Salary: $50,000-$60,000 + 10% target performance bonus, along with a comprehensive benefits package
Summary
Working under the umbrella of Aquilini Food Services Limited Partnerships and it’s subsidiary companies, the Sous Chef will be responsible for the creation and service of outstanding food and for the daily supervision and production of culinary operations for our new premium Italian cuisine corporate and private catered events business. Events will be held both within and outside Rogers Arena. This position is also responsible for ensuring that premium level hospitality is delivered, alcoholic beverages are served safely, food quality and sanitation standards are maintained at a fine dining level at all times.
DUTIES AND RESPONSIBILITIES: (other duties may be assigned as required)
• Responsible for the overall management of culinary staff including supervising activities of cooks and stewards with a premium level Italian cuisine focus.
• Supports the hiring and training of all culinary team members
• Coordinates all food requisitions for event menu requirements
• Creates menus for specific client requests
• Executes all off-site catering with onsite support
• Engages with guests, as well as, team members to ensure exceptional hospitality service is received at all times
• Works with the in-house Hospitality management team to ensure correct billing of events, including food, labor, props, rentals, taxes and gratuities
• Maintains kitchen sanitation standards to comply with Provincial regulations.
• Manages sales revenues and operating expenses effectively
• Provides input into product ordering and oversees receiving within corporate/client specifications.
• Ensures food quality in presentation and production are consistently maintained at a premium level
• Supports the mentorship and development of all culinary team members on a daily basis
• Partners with other Hospitality and Rogers Arena Leadership to ensure a successful operation
• Assists with other related duties and responsibilities as assigned
Experience And Qualifications
• Minimum 3 years’ experience as a Sous Chef, including experience in high-end, premium event/catering preparation
• Must have at least 8 - 10 years of experience in authentic regional Italian cuisine. With a deep understanding of Italian food history, tradition and culture
• Must have worked 8 – 10 years of experience in upscale fine dining, premium Italian restaurants with multiple opening experience
• Proven experience working in both commercial and residential kitchens, including non-traditional locations
• Experience providing high end authentic Italian meals, whether for one person or a large group of people
• Must have a solid understanding of nutritional needs
• Training in Italy is an asset
• Equivalent Red Seal certification, a degree in the Culinary Arts or an equivalent combination of education and experience
• An inspiring leader who has proven skills rallying a team to achieve its highest potential, and then driving it to the next level
• An ongoing awareness and responsiveness to client satisfaction.
• Exceptional interpersonal, presentation and communication skills, where building a rapport comes naturally
• Previous premium level experience with VIP clientele is essential
• Demonstrated experience diplomatically handling situations with VIP clientele
• Highly confidential and discreet
• Presents a highly professional and premium deportment, posture, mannerism and behaviour
• Impeccable creative culinary abilities
• Experience in food costing and menu development
• Highly committed to a premium level of quality
